Cook rice and dal separately.

Prepare the kadhi by mixing yogurt, besan (gram flour), water, turmeric powder, salt, and sugar. Cook it in a pan until it thickens.

For the mixed vegetable curry, sauté chopped vegetables (like potato, carrot, beans, etc.) in a little oil. Add salt, turmeric powder, red chili powder, and cook until the vegetables are tender.

Prepare the green chutney by blending coriander leaves, mint leaves, green chili, ginger, lemon juice, and salt.

Roast the papad on a flame or in the microwave.

Prepare the kachumber salad by mixing chopped cucumber, tomato, onion, and coriander leaves. Add salt, lemon juice, and toss well.

Heat ghee in a small pan and add cumin seeds. Once they splutter, remove from heat and add it to the dal.

To assemble the thali, place the cooked rice, roti, dal, kadhi, mixed vegetable curry, papad, kachumber salad, green chutney, and sweet chutney in separate bowls.

Garnish with chopped coriander leaves and serve with lemon wedges.
