Preparation

In a pot, heat butter over medium heat.

Add chopped onions, minced garlic, and green chili. Sauté until onions turn translucent.

Add the chopped spinach and stir well. Cook for 4-5 minutes until the spinach wilts.

Sprinkle all-purpose flour over the spinach mixture and mix well. Cook for another 2 minutes.

Pour in milk slowly, while continuously stirring to avoid lumps.

Bring the mixture to a boil and simmer for 10-15 minutes on low heat.

Add salt and pepper to taste.

Using an immersion blender or a regular blender, blend the soup until smooth.

Return the soup to the pot and heat it gently.

Stir in fresh cream and lemon juice.
